Passionfruit and Jasmine Green Iced Tea Recipe

  • Purefolk Organic Jasmine Green Tea - 6 heaped teaspoons

    • Ratio is 1 heaped tsp for every cup of water

  • Pulp of 6 large passionfruit

  • Castor Sugar, (or monk fruit sweetener for a sugar-free healthy alternative)

  • Filtered Water - 6 cups (1.4 litres

  • Ice - cubed or crushed.

  • Fresh thyme twigs to serve (optional)


Preparation

This recipe, in a nutshell, is green tea with sweetener, passionfruit and ice added.


  1. First you need to make the green tea. This recipe makes 3-4 large glasses, depending on the size.

  2. Choose your brew method - loose in a teapot or in a jug with either a large tea-strainer, or 3 x Purefolk eco disposable teabags (2 tspns per bag).

  3. Add 6 heaped teaspoons of Purefolk Organic Jasmine Green Tea to your chosen brew method.

  4. Add hot water - NOT BOILING water to tea. This is perhaps the step where most people go wrong with green tea. If you use boiling water the green tea will be bitter. Turn the kettle off just before it boils. If you forget, wait about 4-5 mins for the boiling water to cool before adding to tea.

  5. Steep for 1-2 minutes. No longer or the tea will start to become bitter.

  6. Strain or remove the green tea leaves and discard.

  7. Add 2 heaped teaspoons of sugar, sweetener or honey and stir until dissolved.

  8. Add the passionfruit pulp of 5 passionfruit and stir.

  9. Do a taste test and you can add either more water or sugar depending on how strong or sweet you like your iced tea. If you want to add more water, use ice, as it will melt and cool the tea down quicker.

  10. Voila! You're done! You just need to allow it to cool in the fridge. We tend to make a batch every night and leave it to cool in the fridge for the next day.

  11. To serve, pour over crushed or cubed ice in glasses and garnish with extra passionfruit pulp and a pinch of fresh thyme (optional).


TIPS


If you're in a rush then I would use less water when brewing the tea and then add some ice at the end to cool. We often make passionfruit pulp ice cubes and add the frozen passionfruit to the tea to cool. 1 x ice cube per cup.
